A one bowl easy to make Fudgy Chocolate cake

Cooling/ refrigerate time 90 mins

Serving 10 to 12 people

Ingredients

Chocolate cake:

  • 200 g plain flour

  • 310 g white granulated sugar

  • 50 g unsweetened cocoa powder

  • 2 teaspoons of baking powder

  • 1 1/2 teaspoons baking soda

  • 1/2 teaspoon salt

  • 80 ml vegetable oil

  • 1 large egg

  • 1 tablespoon pure vanilla extract

  • 190 ml milk

  • 190 ml boiling water mixed with 2 teaspoons of instant coffee powder

Chocolate ganache:

  • 150 ml double cream

  • 75 ml milk

  • 250 g dark chocolate

Instructions

  1. Preheat oven 175 C

  2. Lightly grease an 18 cm round cake pan with non-stick cooking spray or grease proof paper

​

Chocolate cake:

  1. Combine flour, sugar, cocoa powder, baking powder, soda and salt in a bowl, and whisk thoroughly to combine well

  2. Combine oil, egg, vanilla and milk then add to the flour mixture and beat well.

  3. Mix coffee with the boiling water and add to the mixture while mixing well until you obtain a glossy look.

  4. Pour the cake batter into the prepared pan and bake for about 40 to 45 minutes, until a toothpick inserted in the centre comes out semi-clean with a small of cake (not runny) on it due to the fudgy texture.

  5. remove from oven to cool for 20 minutes, then remove cake from the pan and let it cool fully on a wire rack

Chocolate ganache:

  1. Pour the cream into a small saucepan and heat over a low heat for a few minutes without letting it to boil.

  2. Turn off the heat, remove from stove, add the chocolate chips, cover and let it sit for about 5 minutes to soften and melt the chocolate.

  3. Uncover and stir slowly first with a wooden spoon then faster until the ganache is smooth, creamy and glossy. Refrigerate for 1 to 1 1/2 hours until thick enough to spread

  4.  Spread evenly over the cake.
